blakey's mexican casserole

blakey did a little cooking last weekend!  he did a little recipe searching, made a grocery list, & did all of the cooking.  & it was delicious!  i am so proud of him.


mexican casserole

1.15 lb ground beef
1 package taco seasoning
1 T chili powder
1 can ranch-style beans
1 can rotel
1 can cream of mushroom soup
1 can black olives, chopped
12 corn tortillas
4 c shredded cheese {we went with mexican blend}

1. brown the ground beef in a large skillet over medium heat.  add seasonings, beans, rotel, & soup.  mix as best you can & heat through.


2. layer a sprayed 9x13 dish with a row of 6 tortillas.  


3. layer half of the beef/beans mixture.


4. layer with all of the black olives.  you want them to get squished in there.


5.  add some cheese.  as much as you'd like. 


6. then it's tortilla time.


7. you guessed it, the rest of the beef/bean mix is next.


8. top with more cheese & you are ready to go!  


9. bake at 350 for 30ish minutes, until that beautiful cheese is a little golden & a little bubbly.
