while my boys were sleeping, i thought i would take the time to enjoy one of my two favorite childhood movies, sister act 2...
if you wake up in the morning, & you can't think anything but singing, then you should be a singer, girl.
hey, hey - excuse me! it is not maria's fault that she does not know mary had a lamb... because maybe, maybe where maria came from, mary had a dog.
anyway, i watched one of two movies that i literally could quote the entire thing to you right now (the other being the breakfast club... ahhh...) & did may favorite grown up activity - i baked. & my go to recipe when baking & having zero interesting ingredients around the house is:
soft sugar cookies with icing!!
for the cookies:
1 1/3 c butter, softened
1 1/2 c sugar
2 eggs
2 tsp vanilla
3 1/2 c flour
2 tsp baking powder
1 tsp salt
for the icing:
some powdered sugar
some milk
some food coloring
1. preheat over to 350.
2. cream together butter & sugar until light & fluffy. stir in eggs & vanilla. combine flour, baking powder, & salt in another small bowl; then gradually add to butter mixture until dough comes together.
3. (since we are using butter instead of shortening, this next step is important.) wrap the dough in saran wrap & chill in the fridge for about 30 minutes.
4. roll dough into balls & place on a cooking sheet with a silipat mat. (you need one of these! it saves cookies!)
5. bake cookies 11 minutes, before they look completely finished.
6. meanwhile, stir together the icing ingredients. this part is scientific - keep adding until "it looks right".
7. once the cookies are completely cooled, ice away!
