hamburger stroganoff & corn casserole.

it is easy recipe day!  last night, blakey & i had a very manly, very delicious hamburger stroganoff that was super easy to make & was ready in no time.  enjoy!

hamburger stroganoff

1 small yellow onion, chopped
butter
1 lb ground chuck
1 can cream of mushroom soup
1/2 c sour cream
lemon juice
salt, pepper, garlic powder
8 oz fresh mushrooms, sliced
red wine vinegar

12 oz whole wheat egg noodles
dried parsley

1. in a large skillet, saute onion in butter until it starts to sweat.  add ground beef & brown.


2.  add soup, sour cream, lemon juice, salt, pepper, & garlic powder to taste.  continue heating mixture on low.  do not let the creams boil.


3. in a separate skillet, saute mushrooms in red wine vinegar until soft.

4. meanwhile, cook egg noodles in boiling water until al dente... no one likes soggy noodles.


5. serve the stroganoff over egg noodles & top with a bit of dried parsley.  yummmm.


we served ours with the easiest & most requested side dish ever.  (EVER)  

corn casserole

1 can sweet whole kernel corn
1 can sweet cream corn
8 oz sour cream
1/2 stick butter
1 box jiffy corn bread

mix all ingredients together in a baking dish.  bake at 400 for 45 minutes-ish.
