blakey is on nights right now, which isn't very fun. but he is lucky to have an awesome night team - jamie lynn, gretchen, & amy {not pictured... busy busy working}. they have team dinner once a week & this week was blake's turn!

these new recipes from pinterest turned out pretty darn well. i heart you, pinterest.
spicy avacado chicken enchiladas

i actually followed this recipe pretty darn closely. i used evoo instead of butter. i almost never use butter in savory cooking. at first, it was just because olive oil was easier. then i fell in love with the taste of it. & then i learned it was healthier. heck yes.
i used jalapenos instead of serranos. & i threw half of a red onion in the sauce as well. vanity onions, make everything prettier.
& i sauteed the yellow onion before putting it in the enchiladas.
they were quite delicious!
roasted corn & avocado salad with cilantro vinaigrette

i actually followed this one pretty closely as well. {are you impressed??} i roasted my corn in the oven since we have no grill. husks on. 400 degrees for about 30 minutes. it comes out perfectly.
& i used minced garlic instead of the powder, of course.
also very good. fresh but the feta added just the right amount of creamy. a great side dish for mexican food.
i heart the night team. such a wonderful group of people. thank you for hanging out with my husband for the next few weeks. & taking care of him. & making sure he eats good food.
