asian lettuce wraps.


before we started packing up & subsequently turning our kitchen/home into a complete disaster area, i made these pretty darn awesome lettuce wraps.  i was dying to eat some red meat while blakey is still on his healthy kick, so i thought this was a great compromise...

asian lettuce wraps

1 lb lean ground beef
evoo
1 large yellow onion, chopped
some garlic, minced
2 T soy sauce
2 T rice wine vinegar
1 T chile paste
2 tsp sesame oil
1/2 c hoisin sauce
some grate fresh ginger
1 can water chestnuts, chopped
1 can baby corn, chopped
1 can bamboo shoots {i LOVE bamboo shoots}
1 bunch green onions, green & white parts, chopped
some big enough lettuce leaves
4 carrots, shredded

1. in your awesome le creuset buffet that i've encouraged you to get since christmas, brown the beef over medium high heat.  take beef out of the buffet & set aside.

2. in that same amazingly awesome buffet, add a little evoo, cook those onions & garlic.  once they start to smell lovely, add the soy, vinegar, chile paste, sesame oil, hoisin sauce, & ginger.  stir stir stir.  throw in the water chestnuts, baby corn, bamboo shoot, & green onions.  & the beef too.  stir some more & cook until warm throughout.

3.  put your lettuce leaves on a plate.  stuff with the beef + amazing asian mixture.  top with some shredded carrots for color & texture.  wrap it up & enjoy your lovely asian lettuce wraps!
