yummy chicken enchiladas!

it would be an understatement to say blakey & i miss mexican food.  we have finally found a delicious taco place that compares (not as good as, mind you, but at least compares) to big truck.  & we've even found a mexican restaurant that serves chips & salsa, happy hour margaritas, & food that actual people from mexico prepare.  it's pretty good - but far more expensive than the oklahoma version of tex mex.

so i have decided we must eat mexican the old fashion way - learn to make it ourselves.  (haha...myself.  blakey is not a huge cook.)

as are almost of all of my savory dishes, this delicious recipe is super easy.  far less work than i hear enchiladas can be...because i almost never make super difficult food.  down home cookin' is best.  enjoy!

yummy chicken enchiladas!

1 T butter
1/4 c green onions, chopped
1/2 c white onion, chopped
1/2 tsp garlic, minced
4 oz green chiles, diced
1 can cream of mushroom soup
1 can cream of chicken soup
1/2 c sour cream
1 rotisserie chicken, shredded
1 c shredded cheddar cheese, divided
6 (12") flour tortillas
1/4 c milk


1. preheat oven to 350.  lightly grease a large baking dish.

2. in a large skillet over medium heat, melt the butter & saute the onions until translucent. 

3. add garlic, chiles, soups, & sour cream.  mix well & heat throughout.

4. reserve 1/2 of the sauce & set aside.  in the remaining half still in the skillet, add the chicken & 1/2 c cheese.  stir together.


5. fill each tortilla with the chicken mix & roll up.  place seam side down in the prepared baking dish.


6. add milk to reserved sauce.  pour this mix on top of the rolled tortillas & top with remaining 1/2 c cheese.


7. bake at 350 for 30 minutes or until a little bubbly.  then increase temp to 400 for 5 minutes or until cheese is golden brown.

  1. We feel your pain! Matt and I found a Mexican place that is decent, but nothing compared to Okie-Mex! Luckily Matt makes some yummy enchiladas! These look good too!
