it is hot outside & that means it is berry season! we have so many beautiful berries in our kitchen, including these fabulous gigantic blackberries. i love blackberries. a little bit tart; a little bit sweet. love them.
so when i found this recipe on pinterest for apple blackberry cake, i knew it was going to be {almost} summer love!
& because i am feeling extra sweet, i'll give you my version:
apple blackberry cake
adapted from the ginger cook
1 1/2 c flour
2 tsp baking powder
1/2 tsp salt
3 oz butter, melted
3/4 c brown sugar
1/2 c buttermilk
2 eggs
2 apples, cored & sliced into 16 wedges
1/2 pint blackberries
topping:
2 T brown sugar
a dash or two of cinnamon
1 oz butter, cut into little pieces
1. preheat oven to 350. spray a 9" springform pan & dust with sugar.
2. whisk together flour, powder, & salt. in another bowl, mix together melted butter, brown sugar, buttermilk, & eggs. pour liquid into dry & lightly stir until combined. spread batter into your pan.
3. arrange apples in a pretty overlapping pinwheel pattern over your batter. presentation really is the beginning of everything, isn't it? cut a few of the slices up to cover the center, if needed. sprinkle the blackberries on top. gently press fruit into the batter, just until you see a little batter popping through.
4. sprinkle brown sugar & cinnamon & butter pieces on top. bake 45 - 55 minutes or until the cake is golden & a toothpick comes out clean. let cool & eat away!
