the best easy, cheap, tasty, & actually still a bit healthy meal we've ever made.


seriously.  it actually was super easy, quite cheap, very tasty, & a bit healthy.

go make this tonight.  you'll be grateful you did.

ps the recipe is adapted from one i found on allrecipes {here}.  but take my advice :)

fish tacos!

1 can corn, drained
1/2 red onion, finely chopped
1 orange bell pepper, chopped
some fresh cilantro, finely chopped
1 lime, zest & juice
some lite sour cream
2 T cayenne pepper
1 T black pepper
1 T salt
6 tilapia fillets, thawed {we used frozen target brand. 
& it was a great choice.  yes, it was frozen.  but yes, it cost a sixth of fresh tilapia.}

corn tortillas, warmed

1. as we do live in a loft building with no outdoor grill, we preheated our indoor cuisinart grill to medium.
2. in a bowl, mix together the veggies, cilantro, & lime.  
3. in another bowl, mix the cayenne and S&P.  brush each side of the fillets with oil & sprinkle with spices.
4.  place fillets on the grill & cook for about 3 minutes per side.  they are finished when flaky.
5. arrange a fillet, cut into two, on each tortilla & top with the corn salsa & sour cream.
