a fat tuesday french onion dip.

happy fat tuesday, friends! 

i hope you are enjoying whatever indulgences you are going to give up for lent. 

i haven't picked mine yet.  i usually go with caffeine or cussing.  but caffeine has been conquered & it would just be ridiculous while working at a coffee shop.  & i started the cussing ceasing a few weeks ago.  {it's going ok.  about as it always does.}  what are you giving up this year??

in honor of fat tuesday, here is a fantastically fatty recipe for you to enjoy!

homemade french onion dip!


evoo
2 large yellow onions, thinly sliced
1 1/4 c lite sour cream
1/2 c lite mayo
a few dashes of worcestershire
a bit of lemon juice
garlic powder
kosher salt & pepper

1. heat two turns {thank you, rachel ray, for that actually helpful measurement} of evoo in a large skillet over medium heat.  add onions.  carmelize those babies until they are quite soft & golden brown, 30ish minutes.  enjoy the most wonderful cooking aroma in the world - evoo & onions.  yum.


2. in a medium bowl, mix together the remaining ingredients.  once the onions are cool-ish, add them to the mix.  stir.  cover.  refrigerate.  this dip is truly better the next day, so try not to eat it quite yet.  & go ahead, serve with ruffles like you always used to eat with the nasty tub version as a kid.
