arugula walnut pesto.


homemade pesto sounds so fancy.  & super chefy.  why would you make pesto when you can just buy it?  well, because it's awesome to make homemade pesto!  you can use whatever greens & nuts your heart desires.  it's quite delicious.  & it's pretty darn easy.

4 oz fresh arugula
1-2 cloves minced garlic  {read note below!}
1/4 c toasted walnuts
1/2 c evoo
2 tsp lemon juice
1/2 c parmesan cheese

1.  in your food processor, combine the arugula, garlic, & toasted walnuts.  {start with 1 clove of garlic!  i LOVE garlic. i've never tasted anything with too much garlic.  in fact, i usually go ahead & double the amount of garlic in any recipe.  so i did that & had WAY too much garlic.  so believe me on this one.  start with just 1 clove.}  

2.  pulse a few times to get the processing going.  add about half of the olive oil.  process until everything starts coming together.  drizzle the remaining oil in while the processor is, well, processing.  

3.  when all of the oil is incorporated, add lemon juice & parmesan cheese.  process until fully incorporated & you have a beautiful looking pesto.  

4.  taste your creation!  it probably needs some salt & pepper.  maybe a little garlic or lemon juice.  add & continue to process until beautiful & tasty.
