blake's spring cookout!


the first gorgeous weekend this year meant our first cookout!  blakey is working on his man points, so he wanted to be in charge of the meat.  he found an awesome recipe, went to the grocery store with me to get all of the ingredients, got up early to start cooking, & saw it all the way through.  & you know what, it turned out delicious!  super proud of manly blakey.

i suppose "manly" & "blakey" should really not be used in the same sentence.

5 lb boneless pork shoulder
generous sprinkles of salt & pepper
2 c white vinegar
2 T brown sugar
1 1/2 T tabasco
2 tsp cayenne pepper
2 tsp crushed red pepper flakes

1. generously sprinkle all sides of the pork shoulder with salt & some pepper.  put in big crockpot.  pour vinegar around the pork.  cover & cook on low for 12 hours.  {we only had 9 hours, so we went with 4 hours on high & 5 on low.  it worked well too.}

2. when the pork is super soft & easily pulls apart, it is done!  remove it from the pot & shred away with two forks.  shred shred shred.  discard any obvious fat globs.  you can keep the small ones but smash them up & stir in the meat.  

3. save 4 cups of the delicious broth, throw out any remaining.  put the pork back in the delicious reserved broth.  stir in the brown sugar, tabasco, cayenne, & red pepper.  give it a taste!  delicious!  

our friend j.boone brought over an awesomely manly appetizer to share too - shredded cheddar & cream cheese with crushed ritz crackers & crumbled bacon on top, baked to bubbly perfection, & topped with captain rodney's pepper glaze.  you can get this "top tailgating recipe in the south" {HERE}.  so good.  & legit man food.
