turkey burgers {i promise they are actually good}


for a couple of beef-lovers from the great state of oklahoma, turkey burgers sound a little strange & overly healthy & not delicious.


but these were actually quite good!  i'm not going to tell you they taste like beef because they do not.  but they absolutely do fill that craving for a burger when you are trying your best to eat healthier.


or trying to live in alabama with no good beef to be found.

either way.  try them!

artichoke stuffed turkey burgers

1 lb lean ground turkey
1 T balsamic vinegar
1 small sweet onion, chopped
garlic salt & pepper
6 artichoke hearts, chopped
4 oz feta cheese {maybe less, surprisingly}, sliced into 4 thin slices
4 whole wheat buns
burgers toppings

1. in a big bowl, work together turkey, balsamic vinegar, onion, salt, & pepper until well blended.

2. divide meat into four portions.  remove about half of each portion & flatten into patties.  place a small slice of feta & some artichoke hearts on top.  lightly smoosh the other half of each patty portion on top.  do your best to seal the edges of the patties.  {you'll see why i say possibly less feta.  luckily, a little bit goes a long way in the flavor department.}

3. heat a cast iron skillet over medium heat with a tiny bit of oil.  cook the patties over medium-ish heat WITHOUT MOVING until the bottom side has a nice sear & the middle is starting to cook, about 10 minutes.  flip them without everything spilling out.  cook on the other side until that side also has a nice sear & the inside of your burger is cooked through.  but please do not cook the heck out of them & dry them out.  maybe another 10 minutes.  {these times are complete guesses, by the way.}

4. serve on your healthy whole wheat bun with ketchup & mustard & lettuce & pickles!

& afterwards you will feel great about eating a bit more healthy burger!  awoohoo!
