the super bowl means it is time for super snacks! for our last football gameday of the season, blakey got to pick his favorite savory football snack. he, of course, went with his beloved chorizo queso. it really is quite tasty. & ridiculously easy. i then got to pick the sweet snack. & if you know me & baking at home, i only do ridiculously easy. chocolate oatmeal no bake delights. always a winner!
1/2 c butter
2 c sugar
1/4 c cocoa powder
1/2 c half & half
1 c natural peanut butter
1 tsp vanilla
pinch or 2 of salt
3 c rolled oats
mini chocolate chips for topping
1. in a medium saucepan, melt butter over low heat. add sugar, cocoa powder, & half & half. bring to a simmer over medium high heat, stirring frequently. let bubbles continue for two minutes, still stirring. remove from heat.
2. add peanut butter & stir to incorporate completely. add vanilla & salt & stir. then add the oats & stit stir stir.
3. allow the mixture to cool for a couple of minutes. portion onto parchment paper & continue cooling to room temperature. {if you have no patience, like me, chill for 5 to 10 minutes to cool.} once you can pick them up with your hands without getting gooey chocolate every where, they are ready to eat!
chorizo queso
32 oz velveeta, chopped up
2 cans rotel, one hot & one regular
1 lb awesome mexican chorizo, casings removed
1. toss the velveeta & rotel into your medium-sized crock pot & set to high heat.
2. meanwhile, heat a skillet over medium high heat. when hot, add chorizo. chop up the meat with your rubber spatula & cook until done, about 5 minutes. add to the crockpot.
3. continue heating on high until all of the cheese is melted & the mixture is hot. it takes about 30 - 45 minutes. you probably want to stir along the way to incorporate everything together & make those delicious flavors marry.
4. serve with chips & enjoy!
how long do we have to wait for football season to begin??
