week 22: saying goodbyes.


our four years in sweet home birmy have come to a close.  it's been an incredible four years of ups & downs & beginnings & endings.  blakey learned how to be an excellent physician.  i learned how to be a pasty chef & actually love my job.  we learned how to live in a city we knew nothing about.  we learned to make friends, truly amazing lifelong friends.  & we even learned how to be husband & wife.


the biggest life lessons i learned while in birmingham:

1. be selfish with your marriage.  learn to put your spouse & your marriage first before all of the other things that are in your life - work, friends, even other family.  it might sound rude, but it's so important to start there & learn to live out your life together.  i will point out a very wise thing my father-in-law said to me before blake & i got married: when marrying a doctor, you have to be ok with coming in second.  you are always his first priority, but you are going to come in second sometimes.  this is also a good thing to remember.

2. find an amazing group of married friends with similar beliefs about marriage.  i cannot tell you how lucky & blessed we were to find these amazing friends.  not only because they are each awesome but because we all understood how important our spouses were to each other.  it made it even easier to put our marriages first.

3. marriage is a choice.  a wise friend of ours once told me that the key to a good marriage is to wake up each day & choose your spouse.  sometimes it's easy & sometimes it's hard.  but it's always a choice.

4. even if you love your job, it's ok to love home more.  i always wanted a job that i looked forward to going to on monday mornings.  after having my dream job for the last three years, if you asked me if i'd rather be at work or at home, i'd choose home every time.  & you know what, that's ok.

5. please don't ever say "i don't have time" or "i don't have a choice".  you have time.  you get to choose how to spend your time.  & you have a choice.  just because you don't like your options, it doesn't mean you don't have a choice.  


four years ago, i never would've dreamed it would be so hard to leave birmingham.  this city with its beautiful trees & hills, its cool summer nights, its amazing food, its southern hospitality, & its incredible people.  birmy, you've been good to us.  


& because you know i couldn't leave this city we love without having a "final meal" {& telling you about it} - our last meal was at saw's.  a pulled pork baker with lots of delicious saw's sauce & the best fried okra there is.  technically, we ate our "final" saw's meal at least six or seven times, including twice in the last week. each one was absolutely incredible.

week 19: my final week at urban.


week 19 meant my last week at my beloved baking job.  urban standard became my home away from home in birmy.  i started working there in only our second month in alabama, when i knew almost no one in the state.  over the years, blake & i met so many friends at the shop and felt much more at home.  after graduating from pastry school, i was enabled to create my dream job.  i could not be more grateful for the experience.


saying goodbyes are always hard.  saying goodbye to your dream job when 19 weeks pregnant - oh my goodness, so many tears!


over my last week, i made so many of my favorite treats, customers' favorite treats, & a few fancy things i had been wanting to try.  but my last day was purely selfish with my favorite espresso donuts, my favorite chocolate chip orange zest cookies, & my favorite spicy mexican chocolate cake bites. blakey & i even shared one a piece.  & they were delicious :)


with all of the goodbyes were also many hugs, so many kind words, two beautiful flower bouquets, fun photos of me baking, & more fun gifts.  helen even taught me how to make her amazing banana pudding!  y'all have to try it.  ask me.  i'll make it for you.


goodness gracious, y'all are the best.  four of the best years of my life with so much learning & experiencing & loving.  urban, you are so going to be missed.

a pastry school graduate!

i am an official pastry school graduate!


our graduation from culinard was this weekend.  in addition to the commencement ceremony, it was a little class reunion, seeing my fellow pastry friends for one of the first times since we finished class in march.  it was so great to see my friends & hear all about the awesome things they are doing.  so proud of you all!

afterwards, blakey took me out to celebrate!  we've been wanting to sit at the bar & eat dinner at whole foods for awhile now, so we finally went.  it was fun to sit & people watch & just spend a little time with my husband.

birmingham restaurant week is here!


birmingham restaurant week 2011 has arrived!

for the next 9 days, many restaurants in birmy are offering fantastic menus for their customers.  it is a fun opportunity to try something new at your favorite restaurant or finally get to that restaurant you've been wanting to try for so long.

& for me this means i have a lot of work to do.  for our dinner offering at urban, we have a peach & blueberry crostata that i will be making all week long.  it involves a pie dough filled with a fresh peach & blueberry mix, folded together to form a rustic-looking free form tart.  ours is not super sweet to let the freshness of the fruit win over your taste buds.

should be a fun & delicious week.

oh, did i mention my pastry school graduation is this weekend too?  it is finally here!  really, i'm just excited to hang out with my friend jess, just like old times.

the birthday weekend!

we had a fabulous blakey birthday weekend!

friday night, we all headed to art on the rocks - a summer event at the birmy museum of art with live music, food, drinks, & art!  the weather was actually beautiful on this summer evening, so we enjoyed the celebration with our friends outside on the patio.  loved it.

afterwards, we had to take our friends to our favorite rooftop patio, above, to see downtown lit up.  they loved it too!

on saturday night, amy & ogden joined us for an amazing dinner at satterfield's restaurant in cahaba.  this modern american + seafood restaurant is one of birmy's best restaurants.  

i had the awesome opportunity of working with satterfield's executive chef, haller magee, at one of the guest chef dinner's at the tutwiler hotel through school.  {apparently, i never told you about it, except for a quick mention at the bottom of [this] post.}  this guy is great - young & creative & full of energy.  

at the restaurant, the kitchen is open for all to see the chefs working their magic.  chef haller saw me in the dining room & actually remembered me!  i must say it was one of the more rewarding parts of my short pastry chef career thus far.  he asked how our dishes were from across the dining room, came over to our table later in our {2.5 hour long...yes!} meal to see how everything was & introduce himself to everyone, & sent us a dessert for blakey's birthday.  awesome guy.  awesome experience.

we will absolutely be back.  i am still thinking about my delicious wahoo fish & blakey's super interesting & delicious pork & amy's oh so tender duck. 


so happy 4 fun-filled day birthday to my wonderful & amazing husband!!

thankful thursday #23

remember when i said i found the most beautiful kitchen tool i had ever seen {here}?

well, my super amazing & supportive & clever & sneaky & genius & wonderful family got the hot pink kitchen aid mixer for me for pastry school graduation!!!!!!!!!!

oh. my. gosh.

they are seriously the most fabulous people on earth.  but i already knew that.

& this is seriously the most fabulous kitchen tool on earth.  it is so gorgeous.  & looks quite divine in my kitchen.


what should i bake in it first?!  probably something great for the fourth of july.  wish you were here, huh?

2. externship update: macarons with 1 o.

french macarons: the cute little cookie sandwiches with chewy yet crisp "cookies" made from meringue.  supposedly the next big thing after cupcakes.

macaroons: the, usually coconut, cookies that you normally think of when you hear the term "macaroons."

note: these two things have very little in common.

i made both this week :)  pictures of the french version:

& i learned that, although my book devoted specifically to french macarons with every single little detail spelled out on how to make these delightful treats mentions nothing of it, you should bake these on silpats.  not baking them on silpats results in a very long time spent trying to peel them off of parchment paper.  do yourself a favor & just use a silpat.

other than that, they were great!  & adorable.  & will hopefully be even better next time.

by the way, biggest challenge of real world vs school thus far: trying to wrap up full sheet pans in plastic wrap without the help of my favorite class partner in crime, jess.  we always joked that it would be hard to do without each other.  but, seriously, it is.  i dropped a sheet pan full of cupcakes on the ground.  {only 30ish, not iced.  but STILL.  not my proudest moment.}

my first wedding cake!

we all know i LOVED blake & my wedding cake by amy cakes.

so when we got to make our first wedding cake in class, i, of course, decided to attempt to recreate ours!

i have so much to learn & get experience doing, but i am really proud of it.

we learned how to cut out the cakes, to ice & stack them, to roll out fondant & cover them, to make fondant swags, to make gum paste flowers, to stick gum paste flowers in a cake...  

it was so much fun!  i remember why i wanted to make cakes for a living.

tonight is our written final & kitchen clean-up and then we are FINISHED!!  next up is my 3-month externship with urban.  i get to bake cupcakes & cookies & other delicious goodies, as well as make the dessert pastries for dinner service.  happy happy me.

lots & lots of petit fours!

our buffet was a huge success!

i am so very proud of our petit four team.  we dreamed big & accomplished even more.  well done, ladies.

my absolute favorite of our 12 varieties was the coffee french macaroons.  but really all of the macaroons were fabulous.  those little suckers are hard to make just right, but that only brings more joy to a wonderful product. 

& although i sound like i am completely bragging, i truly am humbled by how far we have all come in these 1-week-less-than 6 months.
