y'all. this is hands down my favorite pizza i have ever made. ever. possibly my favorite pizza i've ever eaten. that would be a big statement. but this pizza is worth it. try it. seriously.
{also, to all of you who think it is too hard or too time consuming or too not fun to make pizza dough, i really encourage you to try this one! i am terrified of yeast doughs. yes, i'm a baker. yes, yeast still scares me. but this worked perfectly! & i definitely didn't do anything magical.}
fig & prosciutto & arugula pizza
original recipe: the pioneer woman.
{not going to win any blog photography awards here.
but i really like arugula.
& it is 800 times more delicious than it looks.}
the pizza dough:
*make this a day in advance!
1/2 tsp active dry yeast
1 1/2 c ap flour
1/2 c whole wheat flour
1/2 tsp kosher salt
1 tsp fresh rosemary, chopped
1/6 c evoo + more for the bowl
the pizza:
evoo & salt
1/4 c {or so} fig jam
8 oz fresh mozzarella, sliced very thin
6 oz thinly sliced prosciutto
1 very large bunch arugula
for the dough:  
1.  sprinkle yeast over 3/4 c warm {not lukewarm} water.  
2.  in a mixer with the paddle attachment, combine flours & salt & rosemary.  with the mixer running on low, drizzle in evoo until just combined.  still on low, pour in the yeast water & mix until the dough comes together into one entity.  
3.  pour a little evoo in another bowl {that is plenty big for the dough to rise.}  form the dough into a ball & roll it around in the evoo bowl.  cover with plastic wrap & chill until tomorrow.
for the pizza:  
4.  preheat oven to 500.  do this now, as it takes awhile.
5.  roll out your dough on a floured surface until it is the size & shape of your rectangle {half} sheet pan.  {any home use sheet pan is technically called a "half sheet pan", as we have big ones for commercial ovens.}  transfer the dough to your pan that has parchment paper & is sprayed with pan spray.  
6.  drizzle lightly with evoo & sprinkle lightly with salt.  spread fig jam all over the dough.  you don't need a thick layer, but you do want enough to cover the whole thing.  
7.  lay thinly sliced mozzarella on top.  sprinkle with a little more salt & pepper.  bake at 500 for 15ish minutes, until the crust begins to golden & the cheese is melty.
8.  remove your pizza from the oven.  top the hot pizza with prosciutto & lots & lots of fresh arugula.  serve immediately with a little bit of sriracha & enjoy!!
