my kind of valentine.

 
these adorable letterpress cards are my kind of valentine.  a friend at work is the super creative & super talented person who made them.  her company is four hats press, which you should absolutely check out {here}.  & to boot, she is just as sweet as the cards.

for my valentine,  i made little cookies.  we'll call them pink lemonade.  i hope he & the residents enjoyed them!

an ode to my prior cooking.


blakey & i were in the mood for some good ole' comfort food this weekend.  the kind of food that makes you smile, doesn't make you think or work too hard, takes few ingredients, few steps, & few dirty dishes.

& this was a fabulous meal.

first up, greek pork tenderloin.  marinate the pork for a few hours in lime juice, garlic, oil, salt, & dried oregano.  then bake to perfection.


next up: potato boats.  these will be my favorite thing to cook for the rest of my life, thanks very much to my baking & bible girls.  recipe {here}.


we also tried a new dish that the savory class next to my pastry class made the other night.  it was quite delicious.  cherry tomatoes, orange bell peppers, red onion, green onions, goat cheese, garlic, salt, pepper, evoo.  yummm.

& my mom's garlic bread to finish the meal: french bread slices with melted butter & garlic salt on both sides, broiled on both sides.  love it.

so happy the mcgowans joined us for the day!

thankful thursday # 6.

i am thankful for the snow!

remember being a kid & always hoping for snow?  this year must be every child's dream.  

& in my opinion, if it is going to be cold, it should snow.

getting out of class a little early last night & opening late at work {thus getting to sleep in} helped my thankfulness too :)

wedding wednesday # 26: our honeymoon! {part 3}

in addition to basking in the sun on our honeymoon, we actually did leave the hotel to see puerta vallarta.

a few times.  & most of the times revolved around food.

the hotel was on the marina, which was an adorable little area to walk around & find restaurants.

after a few days of sun, sun, sun, we decided to spend the morning on the marina.  we ate at a fantastic mexican version of waffle house called mr cream.  it was delicious!

one of our favorite restaurants {that we may have gone to three times} was Victor's.  Victor himself walks around, brings you a welcome beverage, & chats with every table.  a little mariachi band plays some tunes & gets people to sing & dance.  the food was pretty good too!



on our last night in PV, we went to our two favorites - the lighthouse bar for the beautiful sunset & a delicious appetizer + dessert dinner at tikul with the marina view table.  lovely lovely.



an amazing trip with my new husband that we will never forget.

pizza pizza!

we made the most fabulous homemade pizza.  {i am so humble.}  it was my attempt at a healthier meal.  lots of veggies, fresh marinara, but i still had to add a little cheese.

& i want to share it with you!

first & possibly most important is the pizza dough:


1 {0.25 oz} package active dry yeast
1 c warm water
2 c bread flour
2 T olive oil
1 tsp kosher salt
2 tsp sugar
some fresh rosemary {yes, this is my secret to success}

1. in a small bowl, dissolve yeast in warm water.  let stand until creamy, about 10 minutes.  {i am pretty sure this step is unnecessary since we are using active yeast.  but i am "following"-ish the directions & it dissolves the yeast well, so i let it sit in the water until i needed it.}

2. in a mixer bowl, combine bread flour, olive oil, salt, sugar, rosemary, & yeast + water.  use the dough hook to combine all ingredients until the dough starts crawling up the hook.  cover & rise, about an hour.

{this is when you'll skip down to the pizza portion}

3. turn dough onto very well floured surface {to make your life easier}.  roll out into the shape you would like it.  let the dough proof {ie sit} for about twenty minutes before adding toppings.  {short reason: let the gluten relax, so the dough is super soft & not chewy.}

1. make homemade marinara.  it is super easy & so much more delicious than store bought.  ours is my mom's recipe & you know my theory about not sharing recipes that aren't mine to share, so google & find a delicious one of your own!


2. ingredients!  totally personal preference & what you are in the mood for.  on this occasion, we went with: 

{sauteed mushrooms & onions
note: EVERYTHING is better with sauteed onions}

{fresh mozzarella}

{black olives & artichoke hearts}

3. when your dough is finished proofing, top away!


4. bake at 350 for about 20 minutes-ish, until your cheese is ooey & your crust starts to turn to that beautiful golden brown.
